Yacon is a widely enjoyed South American tuber; which is a large edible storage tuber. Yacon is a close relative of the sunflower and Jerusalem artichoke, and in fact, these roots actually resemble Jerusalem artichokes. 

After harvest, the yacon roots are washed, peeled, and run through a slicing machine. They are then dehydrated at low temperatures to preserve the nutrients, pulverized, and then milled to form a fine powder. This product contains 100% pure yacon powder that is kosher, gluten-free, and vegan.
