Ghee is a premium cooking oil celebrated for its taste, nutritional benefits, and medicinal qualities. Ayurveda, the ancient medical science of India, recognizes ghee as an essential part of a balanced diet, and considers it to be the best fat one can eat. Ghee is the very essence of butter; the end result of a long, slow, careful clarification process that removes all the moisture, milk solids, and impurities.



BENEFITS OF GHEE
The absence of milk solids and water in ghee make it completely shelf stable. Ghee has one of the highest flash points (485ºF), which make this oil the best choice for high-temperature cooking. Ghee is comprised of full-spectrum short-, medium- and long-chain fatty acids, both unsaturated and saturated.

It contains omega-3 and omega-9 essential fatty acids, along with vitamins A, D, E and K. Ghee made from organic butter of pastured cows is one of the highest natural sources of CLA (conjugated linoleic acid). It also has 9 phenolic antioxidants, as well as numerous other minerals.

Ghee has been used for centuries to support digestion and elimination, to promote energy, sexual vitality, skin and eye health, and as reinforce healthy joints and blood.* Ghee is casein-free and lactose-free so it can be safely consumed by those with casein and lactose intolerance.*

ABOUT THE STRAUS FAMILY CREAMERY
We use only Straus Organic European-Style Sweet Cream Butter in our ghee. Straus Family Creamery became the first certified organic dairy and creamery west of the Mississippi in 1994.

Their butter has won the award for the ‘Best Butter in America’ and was named “One of the Top Premium Butters in America” by Food and Wine Magazine. Straus Family Creamery butter has a very high butterfat content of 85%, indicative of their adherence to the quality way in which they make their butter and the balanced diet of their cows.

Straus Family Creamery cows are pasture-raised and organic. The beautiful hillsides of Marin and Sonoma County along the Pacific coast of Northern California provide a rich flora of sweet grasses, where they roam and graze. During the winter, the cows stay in an open-sided barn with large, open stalls fitted with cushioned cow mats plus natural bedding.

At the Straus Family Creamery they power their operation with electricity generated from methane produced from cow manure and power their warehouse with electricity generated from solar panels. They reuse 94% of the water from the creamery on the farm to generate electricity and to irrigate fields. Suggested Use:  Ghee has one of the highest flash points (485 degrees Fahrenheit) of any cooking oil. Therefore, the creation of free radicals and oxidized molecules from high-temperature cooking is prevented. We recommend using it in place of any oils you are currently using for pan frying.
Storage Instructions: One of the great qualities of ghee is its inherent shelf stability. The two things that will compromise this stability are moisture and sunlight. When you use your Ghee, use a clean, dry utensil to obtain your desired serving. Replace the lid as soon as possible. Be careful not to let any moisture get into the jar. Sunlight will cause ghee to oxidize and lose its nourishing properties.
 
We recommend keeping unopened jars in a cool, dark, temperature stable place. Opened jars can be kept in a cabinet, away from light, for up to 3 months. After 3 months, store in the refrigerator for up to a year thereafter. If your ghee does not smell sweet, then it has gone bad.
 
Consistency Information: In general, the consistency of ghee depends on the ambient temperature in which it is stored. When kept in a kitchen cabinet, it will usually remain soft. When kept in a refrigerator, it will become hard. It is perfectly normal for ghee to be liquid, solid or a combination of consistencies. All of these factors depend on the rate of cooling and the temperature outside the jar.
